Abstract
人類對肉類食品的需求量逐年增加，同時寵物和經濟動物的蛋白質需求量也一樣，因此未來飼料蛋白供應量將逐漸不足。為解決此問題，除了減少肉類消費、減少食物浪費外，必須開發替代蛋白質來源。當前全球開發新型替代蛋白質種類，聚焦於昆蟲源、值物源與微生物源蛋白；產業成功的關鍵策略則是建立快速、安全與工業化量產技術，以維持穩定的生產成本與不斷成長的需求量。
