Abstract: 
香菇為本省重要的經濟性食用菇類,栽培數量正逐年的增加中。香菇品種之主要來源有來自野生種及國外栽培種之選拔,雜交育種或突變之利用等。為迎合未來發展趨勢,品種應朝多樣化方向,例如配合不同栽培方式或不同消費需求,而選育出適合段木栽培、木屑栽培、特殊樹種、特殊時期、特殊地域或特定溫度條件之品種。在消費方面,對於香味、形狀、鮮度保存及低價大眾化之品種要求也不同。
Shiitake (Lentinus edodes) is one of the most important edible mushroom in Taiwan. The cultivated strains used in Taiwan were obtained from wild strains by selection, foreign strains, and hybrid strains. Recently , the point is to develop the kind of strain suitable for cultivation by the farmer. Since the necessity of the fruiting bodies, it is essential that the cultivation should be in various type.
