Abstract: 
稻米就其香味之有無可分為香米 (Aromatic rice 或 Scented rice) 與非香米 (即一般稻米) 兩種。前者煮成之米飯具有獨特之香味 (Aroma) ,後者則為一般消費者日常食用之普通稻米。香米品種除米飯外,糙米、白米、米糠、莖、葉、花等亦可能發出香味 (Sonnier, 1962),惟發出香味之部味因品種而異 (近藤,1973)。
