Abstract: | 菇類生產需經菌種製作與培養、培養基質製作與菌種接種培養、出菇管理等三階段過程。一般菌種培養階段均利用麥粒、裸麥、高粱等穀類種子或木屑為主配方製作固體菌種,再接種至培養基質中擴大培養,往往耗時費力,且易受雜菌污染,菌種穩定性差,菌絲常有生長不正常之現象發生,是目前菇類產業經營上所遭遇到的問題。相較於固體菌種,液態菌種係指生長在液體培養基中的菌種或菌絲體,在產業應用上又稱為深層發酵或深層培養。為因應菇類產業朝向自動化、規模化與國際化,菇類液態菌種之開發與應用已成為未來發展的趨勢。應用液態菌種栽培菇類的優點有:1.降低生產成本。2.提升菌種產能(其生長速率快及高養分利用效率)。3.菌齡較短(生長週期短)、純度較高及活力強。4.縮短栽培時間及提早出菇。5.增加庫房周轉率、節省人力及固態菌種生產空間。6.可增加菌種自動化生產,減少勞力。7.菌種接種一致性。雖然液體菌種有許多好處,不過仍須注意事項有:1.從事菌種篩選及改良。2.考量適當的設備投資。3.注重乾淨的生產環境。4.建立標準操作技術及流程。5.增加菌種的櫥架壽命。 Comparing liquid spawn with soil spawn, the liquid spawn possess the following merit, the short time of cultivating fungus, the quick velocity of sending out, the order of fungus age, and the convenient of inoculation etc. By the way, it is more convenient for the edible fungus on grand scale and industry production. There are few papers mentioned about the domestic research of liquid spawn production or extraction of metabolite. This article aims to introduce a model of liquid spawn for the winter mushroom cultivation, and apply to other edible or medicinal mushroom cultivation. |
