Proceeding of A Symposium on Processing of Agricultural Products
Located in the tropical and subtropical areas, Taiwan benefits from warm climate, ample, sunshine and abundant rainfall. These features favor the crop production and have made Taiwan agriculture play a very important role in the development of national economy.
Taiwan¡¦s agriculture was seriously damaged during World War II, but soon recovered and restored to prewar levels in 1952 due to strong rehabilitation efforts made by the Government. Under the government policy of ¡§supporting the industry with agriculture and developing the agriculture with industry¡¨, the agriculture in Taiwan achieved tremendous progress between 1952 and 1971. In recent years, although the structure of Taiwan¡¦s agriculture has changed as a result of imdustrialization, ¡§looking after the farmers¡¨ is still the policy of our government.
¡§Development of Cottage Food Processing in Rural Village¡¨ is a project continuously sponsored by the Council of Agricuture for the past two decades. The objectives are : (1) to help to solve the surplus problem of vegetables and fruits, (2) to enhance the technology of crop processing and marketing value of product, (3) to balance the supply and demand of crops and (4) to develope the local specialties.
Under the project, several products were developed and their processing techniques were tranferred to the factory of Farmers¡¦ Association or Research Group, those are (1) salted and fermented vegetables
mustard, cucumber, bamboo shoots and raddish, (2) bamboo shoots in 5-gallon tank, (3) dried fruits
longan, lychee and persimmon, (5) fruit preserves mango, kumquat, plum, prune and loquat and (6) others : lotus root starch, strawberry jam, seasoned dried peanut, rice milk etc.
