The adequate ERH model and its estimated parameters were evaluated by its fitting ability and predictive performance. The Modified-Halsey and Modified-Oswin equations were the adequate models to describe the ERH data. Comparing results of this study with the previously published data, variety of sweet potato have the significant effect on the ERH properties. Sorption data obtained from literature, their adequate models for highly starchy products such as potato and cassava also be evaluated. The GAB model are not valid by checking the residual plots. The parameters of GAB model can not be modified for prediction of the effect of temperature by the exponential function. An empirical linear model RH=A+B/M+C×T/M was proposed to fit the ERH/EMC data of local sweet potato slices for its simplicity. |
