Abstract: | 園產品採後處理在產業上是極為重要的一環，其基本目標是減少園產品採收後之腐損以及維持良好的品質。由於園產品含水多，容易劣變，因此在先進的國家，採收後腐損率也會高到15甚至25%，在比較落後的地區，腐損率會高到30甚至45%。台灣雖然沒有正式的統計，大部分的園產品腐損率已經不是很高，可算是在先進國家之行列。同時台灣大部分園產品採收後的品質也都維持得很好。 |
