Abstract
收穫後潮濕稻穀之蒸汽處理對糙米產量或碾糙率之影響較小，惟處理時問若超過4 ( 66 年第2 期作）或6 分鐘（67 年第1 期作）時，則較未處理者分別增加糙米產量1%（第2 期作）與0.9%（第1 期作），其差異均不顯著。較長時間之蒸汽處理亦有小幅度提高碾糙率之效果。經短暫蒸汽處理之濕穀，其精米率獲得較大幅度之提高，因而導致精白米之增產。一般言之，精白米之產量隨蒸汽處理時間之延長而增加，處理時間最長時（66 年第2 期作為4 分鐘，67 年第1 期作為6 分鐘）較對照者分別增產精白米6%（第2 期作）與5 %（第1 期作），其差異均達極顯著水準。品種 × 蒸汽處理之交惑作用均不顯著、顯示秈稉稻品種對蒸汽處理持有相同之反應。
Steam treatment of freshly harvested moist paddy rice did not appreciably affect the yield and rate of brown rice, although slight increase was evident at the 4-and 6-minute steaming treatments in the second crop of 1977 and the first crop of 1978, respectively. The yield of brown rice increased 1% and 0.9% over that of untreated control when the moist paddy rice was steamed for 4 and 6 minutes in the second crop of 1977 and first crop of 1978, respectively. The difference was not significant, however. Steaming moist paddy rice greatly increased the rate of milling which in turn, contributed to the increase of milled rice. In general, the yield of milled rice increased with the time of steaming. The yield of milled rice was 6% and 5% higher than that of untreated control when the moist paddy rice was steamed for 4 and 6 minutes in the second crop of 1977 and first crop of 1978, respectively. The amount of increase was highly significant in both crop seasons. Variety x steaming interaction was not significant in both crop seasons, indicating that both Indica and Japonica rice varieties responded similarly to the steam treatment.
