為提升豆類價值,進行相關保建成分分析,包含進行綠豆13 個品系 (種)、黑豆24 個品系 (種) 及毛豆15 個品系,合計52 個品系(種)的DPPH 自由基補捉活性及總酚含量分析,綠豆各品系 (種) 的DPPH 自由基補捉活性以品系MB0012 的2.003 mg (+) atechin eq./g D.W.最高,總酚含量也是以品系MB0012 的 2.296 mg gallic acid eq./g D.W 最高;黑豆各品系 (種)DPPH 自由基補捉活性以品系BS006 的2.318 mg (+) catechin eq./g D.W.最高,總酚含量以品系BS018 的4.156 mg gallic acid eq./g D.W最高;毛豆各品系DPPH 自由基補捉活性以品系VS014的1.303mg (+) catechin eq./g D.W.最高,總酚含量以品系VS014 的1.501 mg gallic acid eq./gD.W.最高,由分析結果顯示黑豆的DPPH 自由基補捉活性及總酚含量較綠豆及毛豆高,品系(種) 方面在綠豆以品系MB0012、MB0009 及MB0006 表現最好,黑豆為品系BS006、BS005及BS018 較高,毛豆則以品系VS014、VS015 及VS012 為較高。大豆主要異黃酮分析方面,進行60 個大豆品系主要異黃酮的分析,結果顯示daidzin 以大株134 品系的729.74μg/g 最高;daidzein 的含量以KVA64 品系的58.01μg/g 最高;genistin 的含量以TS91-34Br 品系的1030.93μg/g 最高;genistein 的含量以KVA64 品系的26.80μg/g 最高。落花生白黎蘆醇的分析結果顯示,台南12 號根部含量為0.0065±0.0022 mg/g ,地上部 (莖部不含葉) ND (<0.00001mg/g),台南14 號根部含量為0.0054±0.0012 mg/g ,地上部(莖部不含葉) 小於1ppm,地方種黑金剛根部含量為0.0046±0.0023 mg/g,地上部 (莖部不含葉) 小於1ppm。
In order to improve the value of the beans, this project analyze the bioactivities of the beans. Tthe antioxidative activities are analyed in 13 mung bean lines (species), 24 black beans lines(species) and 15 soybean lines. In mung bean, the highest DPPH free radical trapping activity is line MB0012 (2.003 mg (+) catechin eq. / g DW), the highest total phenol content is also line MB0012 (2.296 mg gallic acid eq. / g DW );in black beans, the highest DPPH free radical trapping activity is line BS006 (2.318 mg (+) catechin eq. / g DW), the highest total phenol content is line BS018 (4.156 mg gallic acid eq. / g DW);in soybean lines, the highest DPPH free radical trapping activity is line VS014's (1.303mg (+) catechin eq . / g DW), the highest total phenol content is line VS014's (1.501 mg gallic acid eq. / g DW) , the results showed that the DPPH free radical trapping activity and total phenol content in black bean are higher than green beans and soybean, the higher bioactivity content of green beans lines are MB0012, MB0009 and MB0006, in black beans are BS006, BS005 and BS018, in soybean are VS014, VS015 and VS012.The results of major isoflavone in 60 soybean lines display that the line with the highest daidzin content is line134 (729.74μg / g), in daidzein is line KVA64 (58.01μg / g), in genistin is lineTS91-34Br (1030.93μg /g), in genistein is lineKVA64 (26.80μg / g). Peanut resveratrol analysis results showed that, Tainan 12 root content is 0.0065 ± 0.0022 mg / g, above-ground (stems without leaves) is less than 0.00001 mg / g, Tainan 14 root content is 0.0054 ± 0.0012 mg / g, above-ground (stems without leaves) is less than 1ppm, local species of Black peanut , root levels is 0.0046 ± 0.0023 mg / g, above-ground (stems without leaves) is less than 1ppm.
