The results obtained are summarized in the followings: 1.Protein contents was measured by Udy's Dye-Binding-Capacity (DBC) method as well as Kjeldahl's method. The mean percent protein obtained by DBC method was a little higher (15.186±1.95%) than that obtained by the Kjeldahl method (14.43±1.811%), however, the difference was statistically insighificant. Correlation coefficient of percent protein obtained by the two methods was very ight (r = 0.950) indicating that the use of the quick DBC method for protein analysis had been quite reliable. |
