Temperature is an essential environmental factor for rice development and culture. Taiwan is located in subtropical area with two rice crops a year. The fluctuation of temperature during each crop is differed from other temperate countries where japonica rice is cultivated. Therefore, knowledge of the relationship between rice development and temperature should benefit the design of culture manipulation and breeding strategy. Improvement of grain quality has been the major objective of rice program in Taiwan. Temperature effects on grain filling may directly influence grain physical-chemical properties. The present chapter, thus, would focus the review and
discussion on the temperature effects on grain development and filling, starch and protein accumulation, and palatability. Comments and suggestions for current and future researches to improve grain quality under Taiwan’s temperature environment are also proposed in the context.
