本文章主要針對稻米品質之研究概況、稻米品質育種之概況、稻米品質育種的技術、稻米品質育種策略及米用途多樣化之育種等五個課題進行歸纳與整理。其中稻米品質之研究概況係釺對稻米外瓶、稻米化學特性及稻米物理特性等研究成果 加以整理；稻米品質育種概況則就國内歷年來品質育種的成果及變化情形進行探討；而稻米品質育種的技術著重介紹傳統育種方法、誘變育種法及稻米品貨育種經驗；稻米品質育種策略則以廣泛搜集和鑑定優質種源及建立品質育種選拔之指標性狀等進行討論；至於米用途多樣化之育種則以釀酒品種的選育、香米品種之選育及創新 形贸品種之選育爲探討重點。
The objective of the present paper is to review the progresss of breeding in rice quality. Five topics are included in the review: basic researches in quality understanding, the progress in rice quality breeding, techniques used in rice quality improvement, the strategy for rice quality breeding and the breeding for specific use. The review of rice quality researches includes grain appearance, chemical and physical characters. Review in quality breeding focuses on the progress of quality improvement for varieties of Taiwan. The review of techniques used for rice quality breeding includes methods for traditional breeding and mutation breeding. Review in strategy of rice quality breeding discusses the collection and evaluation of rice germplasm, as well as the selection indexes for quality breeding. The review of breeding for specific-use rice includes the breeding for sake brewing rice, aromatic rice and the new-quality types rice.
